I've made this before but instead of arranging tomatoes and onions by overlapping on one level, I layered them in a deeper pan and after each layer added my herbs/spices and grated cheese. Very good!
Ingredients
4 large tomatoes (about 2 pounds), cut crosswise into 1/2-inch slices 1 large or 2 medium red onions (about 1 pound), cut crosswise into 1/4-inch rounds 2 tablespoons extra-virgin olive oil Coarse salt and ground pepper
Directions
Preheat oven to 450 degrees. In a 9-by-13-inch baking dish, arrange tomatoes and onions in rows, overlapping slightly. Drizzle with oil and season with salt and pepper. Bake until tomatoes are lightly browned and onions are tender, about 45 minutes. Serve warm or at room temperature.
p.s. Barb, I couldn't figure out how to insert a link to the recipe so I copied and pasted it here. How would I do that for the future?

Sounds delicious Steph....if you want to create a "link" just go up to the top next to the envelope button on the left there is "world" when you hover over it it says "link" click on that and put in all the information. It will come up as a "text" link.

LOL....when you go to reply or post there are options at the top....like making text bold, changing the size and color etc....then on the right side there are other buttons...last one is the "smilie button" These buttons are where you can do a lot of things. If you don't have any buttons then you are probably using the "quick reply" and I don't think that has as many options. I always use the "quote" button on the right to reply..it quotes who ever you are repling to and gives you all those options.
