Steph...the "Parmesan Zucchini Cakes" in my blog....I see no reason why you have to transfer them to the oven unless frying them does not cook them all the way through before they burn. But...instead of putting in the oven I would start them out with a lid on the frying pan for about 5 minutes on each side....then cook without the lid so they get crispy.

I've heard Zumba Gold is real good too. Stephi-how often are you taking classes at the gym? And good luck with your weigh in tomorrow.
Unfortunately I am loaded with allergies and one of them is to egg whites. I'm not sure what a good protein for morning would be on a fasting day. Cheese is out too and I don't eat fish. Any ideas?
Barbara-Pizza, yum! Do you have a special recipe? And where can I find this recipe for the zucchini you two are talking about? It sounds good. I've been eating a lot of zucchini lately.

Oh Stephie that stinks on your weight! Ugh! Hopefully this week will be much better.
Since I was sick for Mothers Day I got together with 2 of my daughters that live close by. We went to a huge antique fair and walked for 3 hours then we went out to dinner. When we got home I did about 1/2 hour of Zumba. My legs and feet are pretty sore tonight.
Fasting day tomorrow for me, how about you all? Do you know what you're going to eat?

This morning the scale dropped TWO POUNDS! I am as pleased as could be. I played tennis this weekend and I'm thinking it finally dropped because of more exercise - between the zumba and the tennis. Hopefully, it will continue to drop. Even a pound a week would thrill me! My fast day is today too. I still have vegetable soup left and probably a little salad. I hate to eat it all at once so I'll probably have some of it at lunch and the rest in the evening.

Breakfast was my usual scrambled egg with sliced strawberries. Lunch will be sliced tomatoes, cucumbers and radishes. I usually have half an apple for a snack in between lunch and dinner. Diner will be a low cal turkey wrap with 2 oz of turkey, lettuce, tomato, baby spinach and chopped up pickles . It's very filling. I like to save my good meal for last so I am not tempted to eat after my evening meal.

So how did you both do today? I had my usual rough mid afternoon spell but have made it so far. I only had a small tomato til supper then had grilled chicken, grilled zucchini, and brocelli. I've saved some calories to have a snack with tv tonight. I also worked out for 1/2 hour doing some strength training.
I felt really good today, I also worked in the garden. Yesterday when I went out to eat I ate something that I know doesn't agree with me so it was nice to have a day of very little food and some exercise to kick it out of my system.
Barbara-your supper sounds delish, what do you use for a wrap?

I had 2 cups of my home made vegetable soup for dinner. I had a plate full of raw veggies for lunch and my usual scrambled egg and strawberries for breakfast. I usually have the same things for breakfast and lunch...but dinner varies according to what I have on hand or my mood. If I am extra hungry then I go for protein like chicken and a veggie. I love roasted califlower...never had it with onions so I think I will try that next. Roasting veggies is so much better than just steaming them....especially if you can't have butter on a fast day. I like to roast them with a very small bit of olive oil and garlic powder and sometimes a tiny sprinkle of parmeasan cheese. Love roasted brussels sprouts that way too. I see you do really well with the works outs. I walk on tred mill but that is all my bad back can handle for now.

I must have done something wrong with the roasted cauliflower. I cooked it for 45 mins on 350* and it still wasn't done. How do you cook it?
I haven't been that great with exercise this week. I've been super busy and out of the house a lot so I've had trouble fitting in the workouts I want to. I'm trying to exercise every day but missed Wednesday and only did a short one today. Better than nothing. I'll do my "official" weigh in tomorrow but it's looking like I didn't lose anything this week. I've looked online at other dieters (not 5:2) ledgers and they don't always go down and frequently go up so ill try not to get too discouraged. I'll let you know tomorrow how I've done. How is your weight loss going?

Hi everyone, I definitely prefer my veggies roasted too. I've been roasting tomatoes lately too. You should try carrots and parsnips roasted together.........they carmelize into this delightfully sweet mixture that's sooooooooooo delicious. I know I'm losing inches (I can tell in my clothes) so that helps me get thru a week with no weight loss. I HATE SCALES! haha I can weigh myself and then again a few hours later and the difference can be POUNDS. So annoying. So, I don't get on it much to avoid discouragement. Zumba is still happening 2-3x a week. It's not getting any easier though - I wonder when that happens? I know I have been really (really) bad with exercise and have been mostly sedentary so I'm really out of shape. I think that is really key to working off these pounds but it's soooooooooooooooooooo damn easy to do something else that doesn't make you sweat!

I'm not a very good cook so now I need specific instructions for roasting the cauliflower, carrots, and the tomatoes, lol.
I lost another pound!!!! Woo Hooo! My weigh in last Friday didn't really count, my scale must have been having a spaz cuz I haven't seen those low numbers again. I seem to be losing a pound a week and that's what they say is average on the diet. Since I haven't budged in 10 months I am pleased. I also notice my clothes are getting looser. I should do measurements so I don't get discouraged. I don't even know where to measure, lol. I'll have to look it up online.
3 years ago I exercised a fair amount and had an easier time with almost everything I attempted. My circumstances changed and I didn't work out for 3 years and now that I am back to it (sort of, sigh) I'm finding it much more difficult. I've been exercising for about 3 months and it is somewhat easier but not lots...so I'm guessing it takes quite a while for it to become easier. My kids are super fitness buff's and they said when it gets easier you have to ramp it up again for it to work. Great, huh? Lol. I'm like, "how come you enjoy pain?" They say "no pain, no gain".
Barbara-do you have access to a swimming pool? I wonder if you could exercise in that? When I lived in Florida lots of people exercised in pools. I have recently been diagnosed with osteoporosis so now I need strength and impact.

Roasting veggies - really all you do is cut your veggies into smaller chunks or cut grape tomatoes in half and toss them in a mixing bowl. Sprinkle veggies with olive oil and whatever spices you'd like to use and mix all together.....I've used a combination of many like lemon pepper, garlic powder/salt, basil, oregano, creole seasoning, etc etc etc. Then then spray an oven pan with Pam (or whatever you use). I usually sprinkle a little more olive oil and top with grated parmesan cheese and then bake in the oven at a higher than usual temp, like 375 or 400 degrees. I can't remember exact baking time but until they get nice and roasted and start to brown. Actually, try googling "roasted vegetables" and you'll probably see hundreds of different suggestions.
I find exercising difficult now too - after ever zumba class I think when will this get easier?! By the way, my son gave me a $50 gift cert to Amazon for Mother's Day so I just ordered the Zumba Gold set (3 cds, hand weights, booklet, etc) and I should have it Wednesday. Looking to forward to practicing at home so I won't feel so uncoordinated at the class.

I do a lot pool exercises all summer. Feels good to do that. I also do the "resistance bands" and I have 5 lb weights that I use for my arms. Steph is right about the roasted veggies. Just use a bit oil to coat, favorite spices, sprinkle some parm cheese and bake at 375/400 for about 45 minutes. But test it..if it's not done keep on cooking it.

Plus I still can't do it for very long. My youngest daughter gave me a bunch of different weights and resistance bands for Mothers Day, my girls are all excited I'm trying to get my weight down and exercise more. Barbara-good luck with the pool. Maybe by the end of summer you'll be we'll enough to exercise without the pool. Wouldn't that be nice? Do you have back problems? I think that's what you said. Also, how did you get the My Fitness Pal meter on here? I was using "Lose It" but decided to go back to My Fitness Pal. I had a small (but kind of big victory tonight. It's so cold here today that after a shower I put on my winter sweat pants and a kind of too small long sleeved shirt that I wear anyway around the house. My gut usually peeks out---gross---if I move the wrong way. Well, tonight I have about 4 inches to spare to cover my belly!!!! I'm so excited. Maybe my exercising and 5:2 is working?!!! Woo Hoo!!!!

Once you've created your ticker or tracker, copy the code they give you....then come back here and go up to the TAB where it says, "PROFILE", click..., then to the right there will be a button that says "EDIT PROFILE"...click.
